    又烧菜啦 - [饕餮menu]

    炸茄盒

    • 材料:长嫩茄子250克、肉馅100克、水发海米10克、鸡蛋2个、面粉50克、色拉油750克、盐4克、

    鸡精3克、料酒3克、葱姜末各3克、椒盐6克。

    • 做法:1. 茄子去蒂洗净去皮,切夹刀片。海米切末。

                    2. 肉馅内加海米,葱末、姜末、鸡精、半个鸡蛋搅均后,放入茄夹内,茄夹沾面粉备用。

    剩余鸡蛋打入碗内,加面粉搅成全蛋糊,将茄夹拖全蛋糊。

                    3. 勺内放油,烧六七成热,把茄夹逐个下入勺内炸熟,呈金黄色时捞出沥油装盘,放椒盐即好。

    炒五色茄丝

     

    • 材料:茄子350克、青椒25克、火腿25克、竹笋25克、川椒10克、猪板油50克、淀粉10克、

    酱油10克、盐4克、鸡精4克、葱姜丝各3克、蒜片5克、香油5克。

    • 做法:1、茄子去蒂洗净,切丝。青椒,火腿,竹笋,川椒也切丝。

                    2、勺内放油,烧热,用葱、姜丝炝锅,放入茄丝、川椒丝、竹笋丝、火腿丝、青椒丝翻炒,出勺前加味精和蒜片,用湿淀粉勾芡,淋香油出勺装盘即好。

    Italian style greens
    This dish can be eaten either cold as an antipasto or warm as a vegetable contorno. The great thing about it is that you can use any combination of greens, such as baby cabbage leaves, Swiss chard and even salad leaves like cos, gem or Romaine. You can easily buy a big bag of spinach, rocket and watercress and use some yellow celery leaves and other herbs like basil, parsley, sorrel and fennel tops to give you a good mixture.

    Blanch the cabbage leaves and chard to perfection in a pot of salted boiling water for a couple of minutes, then drain in a colander and leave to cool down a little. Put a couple of good glugs of olive oil into a large frying pan or casserole type dish and add the sliced garlic. As soon as it starts to take on the smallest amount of colour, throw in your salad leaves then the cabbage and Swiss chard. Cook on a medium heat for about 4 to 5 minutes, moving the greens around the pan with a spoon or a pair of tongs, then add your herbs and cook for a further minute. Remove from the heat and season carefully to taste with salt and pepper, some good-quality extra virgin olive oil and enough lemon juice to give it a little kick. 
    这道意大利时蔬可作前菜冷食也可热食作为主菜。食材可以是任何你自己喜欢的蔬菜搭配:菠菜,卷心菜,空心菜,水芹,莴苣。。。都是超市非常容易买到的。另外还需要一些香料,罗勒,茴香等。
    制作方法:
    将菜都洗净。煮一锅盐水,把蔬菜在锅里唰一下,几分钟后捞起,搁在一边冷却。准备一个大平底锅,倒入橄榄油,放入切好的大蒜。当它们稍稍变色,就把蔬菜依次放进去炒。用中火,翻炒4-5分钟。加入香料,再炒几分钟,关火。洒上少许盐和胡椒,即可。上盆,淋上生橄榄油和柠檬汁。大功告成!

    This great little recipe is taken from my Little Book Of Big Treats which I've put together exclusively for Comic Relief. All you have to do is bake a few of these and sell them to your friends, family, colleagues or schoolmates and you'll have raised an extra few quid for Comic Relief and their brilliant causes. What could be easier?

    Preheat your oven to 180°C/350°F/gas 4. Line a 25cm square baking tin with greaseproof paper. In a large bowl over some simmering water, melt the butter and the chocolate and mix until smooth. Add the cherries and nuts, if you’re using them, and stir together. In a separate bowl, mix together the cocoa powder, flour, baking powder and sugar, then add this to the chocolate, cherry and nut mixture. Stir together well. Beat the eggs and mix in until you have a silky consistency.

    Pour your brownie mix into the baking tray, and place in the oven for around 25 minutes. You don’t want to overcook them so, unlike cakes, you don’t want a skewer to come out all clean. The brownies should be slightly springy on the outside but still gooey in the middle. Allow to cool in the tray, then carefully transfer to a large chopping board and cut into chunky squares. These make a fantastic dessert served with a dollop of crème fraîche mixed with some orange zest.
    将烤箱预热至180°C,用铝箔纸做个25cm正方形的碗,待用。先在一个大锅里烧一些水,将黄油融解,混合入巧克力,要不停的搅拌。可以在里面加点樱桃,如果你喜欢花生,也可以加入花生阿坚果什么的。在另一个碗里将可可粉,面粉,发酵粉,糖混合,搅拌。倒入锅里,和融解了的黄油,巧克力再一起搅匀。最后打个蛋进去,味道会更好。搅拌是这个甜点最重要的一个技巧。要一直拌,直到成丝状般柔滑。
    然后就能将搅拌好的液体倒入铝箔碗里,放入烤箱。烤25分钟左右,不要马上拿出烤箱,在里面冷却一下,效果会更好。最后取出切成一大块一大块的,你就可以和鲜奶油,果汁一起享用这道美妙的甜点了。

    • 250g unsalted butter
    • 200g dark Fairtrade chocolate (70% cocoa solids), broken up
    • optional: 75g dried sour cherries
    • optional: 50g chopped nuts
    • 80g cocoa powder, sifted
    • 65g plain flour, sifted
    • 1 teaspoon baking powder
    • 360g caster sugar
    • 4 large free-range or organic eggs
    • optional: zest of 1 orange
    • optional: 250ml crème fraîche
